What are Garlic Scapes?
While your garlic continues to grow and mature, it sends out stems and flower heads, which are called scapes. The entire stem and flower head are edible, and can be used in your cooking.
Garlic scapes are a great way to get some extra bang for your buck with your garlic. Plus, picking them off your garlic plant helps put the energy back into creating garlic bulbs. So not only is picking scapes a delicious bonus for you- it’s also a healthy bonus for your garlic harvest!
Garlic Scape Pesto Pizza Sauce
Creating this garlic scape pesto pizza sauce is pretty quick and easy.
To make it, you’ll want to add all of the following ingredients to a food processor and puree until relatively smooth and well blended:
- 1/2 cup coarsely chopped garlic scapes (about 5-6 scapes cut into 1 inch pieces)
- 1/2 cup extra virgin olive oil
- 5 T. parmesan cheese
- 1 T. dried basil (fresh can work too!)
- 1/2 tsp. salt
- 5 cherry tomatoes
I have this ninja food processor and absolutely love it! It is definitely one of my most used and recommended tools for the homestead kitchen- especially if you preserve anything!
This is literally all you do! It makes a lovely pesto that is great on pasta as well as pizza.
Garlic Scape, Tomato, Sausage, and Kale Pizza
We eat a lot of homemade pizza at our house because a lot of the ingredients are things we have preserved already and/or can make from scratch from our garden or pantry staples. The dough is something we can make from scratch with yeast, flour, a little sweetener, salt, and water. The toppings are usually a tomato based sauce, preserved from our garden, with lots of homegrown vegetables if we have them, and sausage, ham, and/or pepperoni.
But eating the same old red sauced pizza was getting old. Plus, by this point in the year, our supply of homemade pizza sauce is really starting to dwindle. That means it’s time to look back to the garden and decide what you can do with what you have. And that’s where the garlic scape pizza came into play!
Instead of the traditional red sauce, this pizza has a beautiful and unique garlic scape pesto sauce (see above for recipe) that is sure to up your pizza game to a whole new level.
Ingredients for Garlic Scape Pesto Pizza
Just a handful of ingredients come together to make this delicious pizza!
- Homemade Pizza Crust
- Garlic Scape Pesto
- 3 cups of mozzarella cheese, divided
- 1 pint of grape tomatoes, sliced in half
- 1 cup chopped kale
- 1 pound Italian sausage, cooked
- Grated Parmesan cheese
Steps to Making Garlic Scape Pesto Pizza
- Preheat the oven to 405 degrees.
- Roll out your pizza crust dough to fit a greased 11×17 inch cookie sheet.
- Spread your garlic scape pesto over the pizza crust evenly
- Spread out 2 cups of mozzarella cheese.
- Cover the cheese with the cooked sausage, tomatoes, and chopped kale.
- Add the remaining 1 cup of mozzarella cheese, as well as a generous shake of the grated parmesan.
- Bake pizza for 10-12 minutes or until cheese is beginning to golden and crust has cooked through.
- Serve with a fresh salad and dinner is (deliciously) served!

Feel free to modify this to your own personal preferences! This worked well for our family.
Many pestos traditionally have nuts in them. Try adding pine nuts or sunflower seeds if you're looking for that nutty flavor.

This pizza can be modified to fit your family's topping preferences! Try adding mushrooms or onions for an even bolder flavor!
Uses and Preservation of Garlic Scapes
Besides making a delicious garlic scape pesto, you can chop them up and use them just like you would use garlic! To preserve them, chop them up into small pieces, then freeze them on a cookie sheet individually. Once they have each been individually frozen, you can add them to a freezer bag to enjoy all year long.
