Cooking from scratch doesn’t need to be complicated. This recipe comes together with basic, fresh ingredients all in one pan. That means easy clean-up, healthy cooking, and delicious food! How can you go wrong?
I created this recipe the day after we had roasted one of our own home raised chickens. Usually on day one, we eat the chicken as is with potatoes and gravy and a vegetable. On day two, we have shredded leftover chicken to use for something else. Day three means making chicken stock, and usually a batch of homemade chicken noodle soup. One whole chicken can truly last our family of five three meals!
One of my favorite ways to use up shredded chicken is with Mexican foods. These homemade cast iron chicken fajitas were a hit with our family, and hopefully will be with yours too!

Ingredients for Homemade Cast Iron Chicken Fajitas
If you have a garden or raise your own meat chickens, you probably already have most of the ingredients you need to make this recipe. And even if you don’t have those things, the ingredients are basic and easy, so you’ll be able to grab them locally if you’re in need.
- Shredded Chicken: I used about 2 cups of cooked shredded chicken for this recipe. This recipe ultimately is designed to use with leftover chicken. So if you’ve just roasted a chicken or have a rotisserie chicken that you’ve just finished a meal with, shred whatever chicken you have left on the carcass and use that for this recipe.
- 1 jar of salsa (12 oz): Home preserved is even better!
- 1 medium onion, sliced
- 1 green bell pepper, sliced
- 1/2 block (4 oz) of cream cheese: This is what gives the fajitas that creamy and delicious texture
- 1/2 tsp. garlic powder
- 1/2 tsp. chili powder
- 1/2 tsp. cumin
- Tortillas: We use our homemade tortillas, which are cheaper and more flavorful than the ones from the store!
- Optional Toppings: Cilantro, shredded cheese
Tools for Cast Iron Chicken Fajitas
This recipe is all about simplicity, which means there aren’t a whole lot of tools you’ll need to make these delicious cast iron chicken fajitas.
The main tool that I use for these is my cast iron pan. It’s here that you make the homemade tortillas, sauté the vegetables, and combine all of the final ingredients for these fajitas.
I have the Lodge Cast Iron Set, which I highly recommend. These pans are honestly some of the most used tools of my kitchen!
Directions for Cast Iron Chicken Fajitas
- Heat your large cast iron pan to medium heat. Add in lard or another oil/fat of your choice for frying.
- Sauté your green pepper and onion together until the vegetables begin to soften, about 5-7 minutes.
- Add cream cheese and salsa to the vegetables in the skillet, stirring continuously as cream cheese begins to soften and melt.
- Stir in chicken to the mixture, coating the chicken .
- Add the garlic powder, chili powder, and cumin, mixing well.
- Serve on a flour tortilla with desired toppings, such as shredded cheddar cheese and cilantro.

Ingredients
