It’s almost maple syrup season here! We absolutely love maple syrup season for so many reasons, but one of the biggest reasons is because it gives us a natural sweetener for us to use all year long. Maple syrup is rich in antioxidants, vitamins, and minerals, which make it a great option if you’re going to be eating something sweet.
This recipe actually was an idea that came from my mom after she told me she substituted some syrup for some of the molasses in our molasses cookie recipe. I started to wonder if I could create a cookie that didn’t have any added sugar beyond maple syrup, did some experimenting, and this recipe was born!
These maple syrup cookies are naturally sweetened with maple syrup and molasses. The addition of spices compliment the flavors really nicely to create a sweet, delicious, and guilt-free cookie.

Ingredients in Maple Syrup Cookies
To make these maple syrup cookies, you’ll need just a handful of ingredients:
- Butter: For flavor, richness, and structure
- Maple Syrup: This is the main sweetener here! It also adds a delicious flavor
- Egg: For flavor and structure
- Cinnamon: A nice complement to the molasses and maple syrup
- Ginger: This also serves as a complement to the molasses and maple syrup
- Molasses: Again, flavor! And for sweetening, too.
- Baking Soda: This helps to create the airiness
- Flour: Flour adds structure to the cookies
Materials Needed for Maple Syrup Cookies
You don’t need many materials for these simple maple syrup cookies without sugar. All you need is:
- A large mixing bowl
- A mixer
- Cookie sheets
- Cooling racks
- A cute apron doesn’t hurt either 😉
Steps for Maple Syrup Cookies
These cookies come together in one bowl then need to chill before baking.
- In a large mixing bowl and using a hand mixer, mix together butter, maple syrup, egg, baking soda, molasses, cinnamon, and ginger.
- Stir in flour, 1 cup at a time. The dough will be sticky.
- Cover your dough and place in the refrigerator for 2 (or more) hours. The longer the better, really!
- Roll dough into 1 inch balls and bake for 10-12 minutes at 350 degrees.
- Allow cookies to rest on the cookie sheet 1-2 minutes before moving them to a cooling rack.
Tips for Success
As you make these cookies, there are some tips to keep in mind:
- Make sure the butter is only softened and not melted. This allows the cookies to keep their shape better.
- Make sure butter is completely mixed. You do not want chunks of butter in the dough.
- Keep the dough in the refrigerator between batches of cookies. You want to make sure this dough stays very cold or it will get sticky and hard to work with, plus the cookies will flatten out while baking if it is too warm.
- Allow your cookies to rest before you remove them from the pan. If you notice your cookies are sticking, try greasing the cookie sheet before you make the next batch.

I tweeked this recipe to have half fresh milled flour, and I eliminated the spices, added salt and chocolate chips. It tastes soooo good. I’m chilling it now and have high hopes!! This was the perfect base recipe though. I know it’s going to be a winner!!
Sadie
I love this!! Thank you so much for sharing your tweaks! I’ll have to try them too!
Anna
I don’t have molasses. Can I skip them?
Sadie
I have not tried it that way, but I wouldn’t recommend it. The molasses is a binding and adds flavor to the cookie.
Christy
Just baked these today, and they are wonderful! I recently cut refined sugar out of my diet and have been using a lot of maple syrup as my substitute (I’m also from Wisconsin). It is very hard to find a good recipe that doesn’t use any sugar at all. Thank you so much for this recipe. I love the cookies!
Sadie
I’m so glad you liked it, Christy! I love cookies too!

These cookies sound amazing and warming! Perfect for the cold, rainy days where I live. I’m going to give this recipe a try this weekend for my sweet husband and kiddos. Great post!
Sadie
Thank you, Rebekah! I hope they bring warmth and happiness! 🙂

These cookies are delicious! Just make sure that the cookie batter is refrigerated because the dough is soft like a cake batter.
Sadie
So glad you liked them!
Julie
This is so great! These look and sound delicious. Maple syrup is one of our main “sweeteners” too, so it fits in perfectly!
Sadie
That’s great to hear, Julie! We love using maple syrup as a sweetener too!
