I really love the traditional biscuits and gravy. It’s one of those traditional wintertime meals that we really enjoy eating often in the colder seasons, especially when we have our own pork as our meat in the freezer. But this time, I wanted to make a twist on our typical meal and create a casserole that I could easily bring to others as a blessing. And so, the sourdough biscuits and gravy casserole was created! This sourdough biscuits and gravy casserole is just like the traditional biscuits and gravy, except with the addition of eggs and cheese plus the tang of sourdough…which takes this dish up to a whole new level. Ingredients for Sourdough Biscuits and Gravy Casserole
Like most of my meals from scratch, you will just need a handful of ingredients from your pantry to make this delicious meal.
Biscuit Dough
- Lard: This is the fat that comes together with the flour to make a flaky and delightful biscuit. You can use butter here, too, but we like to render the fat from our pigs to make our own lard to use at home.
- Salt: For flavor
- Baking Powder: Helps the leavening process for the biscuits
- Sourdough Starter: You can use bubbly starter or sourdough discard for these biscuits. The more active it is, the more tangy your biscuits will be!
- Flour: The binding agent for the biscuits
- Milk: To add richness, flavor, and moisture
Cheesy Gravy Topping
On top of your biscuits, you’re going to add an egg, cheese, and sausage gravy mixture that ties everything together.
- Pork Sausage: Ground pork sausage browned is the base of this rich gravy biscuit topping
- Flour: This is the thickener for your gravy
- Milk: Adds richness and moisture to your gravy
- Eggs: Fresh eggs from our chickens add flavor and filling
- Cheese: We like to use sharp cheddar cheese for an extra tang
- Salt and Pepper: You can add these spices to taste
Steps to Making Sourdough Biscuits and Gravy Casserole
You can make this meal in just a few easy steps!
Step One: The first step is to make the biscuits. I make the dough entirely in my Ninja food processor. Once the dough is made, you can either cut out the biscuits using a biscuit cutter like this one, or you can use a canning ring like I do. If you’d rather not cut the dough, you can probably just lay the dough out flat in the casserole dish without cutting out the biscuits first. I haven’t tried it that way, but I don’t see any issue with it!
Step Two: Make the gravy. After you’ve made the biscuits, you’ll want to make your gravy. To make it, you’ll fry up your sausage in a cast iron frying pan. Remove half of your sausage to a bowl and set it aside. In another small bowl (I use my liquid measuring cup), whisk together milk and flour. Gently and slowly add it to the sausage in the frying pan while whisking continuously. Stir until thickened.
Step Three: Make the egg and cheese sauce. While the gravy is cooking, make your egg and cheese sauce by combining your eggs, milk, and cheese together well.
Step Four: Create the layers. Place your biscuits in a greased casserole dish (9×13). On top of those, add your reserved sausage, covered with your egg and cheese sauce. Next, cover with the sausage and gravy layer. You can sprinkle more cheese on top, if desired.
Step Five: Bake! The final step is to bake your sourdough biscuits and gravy casserole at 350 degrees for 30-35 minutes or until the eggs are set.

Sourdough Biscuits and Gravy Casserole
The tang of the sourdough biscuits combined with the richness of the sausage, egg, and cheese gravy makes for a wonderful and hearty breakfast or dinner.
Ingredients
- Biscuits:
- 6 tablespoons cold lard
- 1/2 teaspoon salt
- 1 tablespoon baking powder
- 1 cup sourdough starter
- 2 cups flour
- 1/3 cup milk
- Gravy:
- 1 pound ground pork sausage
- 1/4 cup flour
- 2 cups milk
- Eggs and Cheese Layer:
- 1/2 cup milk
- 2 cups cheese
- 4 beaten eggs
Instructions
- Make the biscuit dough by adding your lard and 2 cups of flour to a food processor. Cut the lard into the flour by pulsing (or use a fork) until it is a crumbly mixture.
- To the food processor, add baking powder, sourdough starter, and milk. Mix until it is a workable dough.
- On a floured surface, roll out your biscuit dough and cut into biscuits. Place the biscuits in a greased cast iron pan or a casserole dish.
- Next, begin your gravy by browning the sausage. After browned, remove half of the sausage and cover the biscuits with it. Leave the remaining sausage in your frying pan.
- In a small bowl or liquid measuring cup, whisk together 1/4 cup flour and 2 cups milk. Slowly add this to your sausage in the frying pan and remaining sausage, cooking on low heat and stirring until thickened.
- As the gravy forms, make your cheese sauce by combining 2 cups of cheese with 1/2 cup milk and 4 beaten eggs. Pour over biscuits and sausage.
- Add the gravy to the casserole dish as the final layer. You can sprinkle with more cheese, if desired.
- Bake at 350 degrees uncovered for 30-35 minutes or until the eggs have set.
