Our family loves pancakes. I mean, loves them. In fact, my son has actually claimed these to be his favorite food, and lucky for him, we have them at least 3 times per week. Covered with our delicious, home harvested maple syrup, you just can’t go wrong with these pancakes! They’re so fluffy and warm and sweet; they’re a perfect way to start your morning.
I can remember having pancakes on Saturday mornings growing up, and it was always exciting to wake up on the weekend to smell pancakes coming from the kitchen. The tradition continues with our family, and we find ourselves eating pancakes most Saturday mornings and even some week days too. One of the best parts is that they’re easy to freeze, so if you make a big batch on Saturday, you can have enough left over to have some more for the rest of the week for a quick and easy breakfast. That’s a definite win!
I wanted to make sure I was feeding my family something that would get them off on the right foot in the morning, so I wanted these pancakes to be gut-healthy and not full of artificial and refined sweeteners. Because the base of these pancakes is sourdough starter, you’re going to be getting a extra gut-boosting kick. Plus the fact that it’s sweetened with honey means that they won’t be overly sweet.
Sourdough Starter

Plus, it’s a fermented food that helps out your gut, the home of your immune system. If you’re going to eat flours, this is the way to do it.
The sourdough starter in this recipe can come straight from the refrigerator. It doesn’t need to be fed or active to work. In fact, you can use discard if you have it to make this recipe! However, the more active it is, the better for your gut it will be, so keep that in mind too.
Ingredients for sourdough chocolate chip pancakes
You only need a handful of ingredients to make these delicious sourdough pancakes, and odds are you probably already have them in your pantry and refrigerator at home:
- Sourdough starter (learn how to make your own here)
- Milk
- Honey, Maple Syrup, or Sweetener of Choice
- Baking Powder
- Vanilla (learn how to make your own here)

- Flour
- Chocolate chips (optional)

Directions:
Begin by turning on your griddle and allowing it to warm up. I’ve found that pancakes don’t stick when they’re placed onto a hot griddle! Set your temperature to medium heat.
In your large mixing bowl, add your starter milk, eggs, honey, baking powder, and vanilla together. Stir and combine well.
Add the flour, making sure that it is completely mixed.
Stir in your chocolate chips.
Place your batter in circles on your hot griddle. Reduce heat to medium-low heat. Cook pancakes until they are bubbly, then flip them over to cook the other side. They should be a golden brown color when they’re finished cooking and the middle should be cooked through.
Top your pancakes with butter and maple syrup, and enjoy!

*You can substitute maple syrup or regular sugar for the honey if you don’t have any available
*In a pinch, water will also work in place of milk in this recipe
*Chocolate chips can be substituted for raspberries, strawberries, blueberries, or blackberries and are just as equally delicious!
